Orzo is a small, short-cut which resembles grains of rice. It's super versatile, quick cooking and has the ability to hold up well in various dishes.
Good Food has partnered with to share a variety of orzo recipes, including a delicious one-pot tomato . The recipe notes said: "Have a glut of tomatoes? Put them to good use in this one-pan orzo dish, perfect for a family midweek dinner. Finish with fresh parsley and plenty of parmesan."
Ingredients:One tablespoon of olive oil
One red onion, finely chopped
One chilli, deseeded and finely chopped
600g cherry vine tomatoes, chopped
400g orzo
800ml vegetable stock
A handful of fresh parsley
Grated parmesan
Method:1. Heat the oil in a large saucepan or frying pan on medium heat and fry the onion for four to six minutes until softened.
2. Add the garlic and chilli, cooking for one minute to soften, then add in the tomatoes, letting them cook for a further five minutes.
3. Stir in the orzo, then pour in the stock, cooking for eight to 10 minutes until the liquid has reduced and the orzo is tender. You can add a few tablespoons of water if the dish begins to dry out.
4. Scatter in three-quarters of the parley and stir this through before serving in pasta bowls.
Top with the remaining parsley and a grating of parmesan if you like, before enjoying immediately.
If your tomatoes aren't ready to pick or aren't in season, Good Food said a can of chopped tomatoes will also work.
